Marinated Fried Tofu
This recipe comes from a friend of a friend—the best ones always do! It’s so easy and totally good.
Marinated Fried Tofu
Serves 4-5
Ingredients
1 tablespoon olive oil
1/4 cup soy sauce
1 tablespoon each of minced garlic and ginger (I really like garlic and ginger so I use a lot, but you can use less. Use at least 1 teaspoon of each)
1 package of tofu (I use 19oz.)
8 oz. chopped mushrooms
5 scallions, chopped
15-20 stalks asparagus, chopped
Directions
1. Press tofu.
2. Mix together olive oil, soy sauce, ginger and garlic. Slice tofu either into “steaks,” no more than 1/4-inch thick or into cubes, whichever you prefer.
3. Marinate tofu (I place it into a zippered storage bag). The recipe recommends at least an hour on each side, but I prefer 30 minutes on each side.
4. Sauté in a nonstick pan sprayed with olive oil over medium heat. Let each side brown, and turn only one if possible. Remove from pan.
5. Add more oil if needed and sauté mushrooms and asparagus until tender. Add scallions and cook a minute longer. Mix tofu in. Serve over rice if desired.
